Providing you with healthy options is something your dining team proudly does every day. We help you select delicious, nutritious & satisfying meals, snacks and desserts by highlighting well-balanced menu choices and providing nutritional information and tips to help you make choices that fit your needs.
Simple Servings is a dedicated food station absent of gluten and eight of the nine most common allergens that collectively represent approximately 90% of all food allergies: milk, eggs, wheat, soy, shellfish, peanuts, tree nuts and sesame. Simple Servings offers fin fish as an added protein option. All preparation, food storage and cooking equipment at the Simple Servings location will always be entirely allergen-free.
Simple Servings will add to the expansive variety present in the College's Wood Dining Commons and allow students and guests with allergies the ability to socialize and dine with others while maintaining the safe environments and food choices they need to thrive at Muhlenberg. The lunch and dinner menus will change daily and include well-balanced meals incorporating assorted proteins, starches and vegetables.
Dining staff assigned to the Simple Servings location will receive allergen training. Knowledgeable and attentive employees, under the direction of the executive chef, will be available to discuss ingredients and answer questions, helping students navigate this new dining destination. Staff across the dining services team will also receive training on how to assist students in any location on campus who may be at risk of an acute allergic reaction.
The new Simple Servings station will be installed during the summer of 2023 and will debut in August when the Class of 2027 arrives on campus.

Our team is dedicated to educating our staff on food allergy standards. Our supervisors, managers and sous chefs are AllerTrain certified and trained to use the campus stock epinephrine. We also hold regular training throughout the year for our employees.

Our Registered Dietitian, Tori Martinez, adds another dimension to our dining program by working with our campus community to encourage healthy lifestyles and to help individuals become more comfortable in their dining environment. She has a passion for guiding herself and other individuals toward total body wellness with emphases on food and nutrition. Tori works closely with our Disability and Health Services teams to ensure the health and safety of our students with medical needs. There are a variety of gluten-friendly items across campus that can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten. Look for our gluten-friendly pantry near Chef's Table which features gluten-friendly offerings such as desserts, bread, and appliances such as a toaster and microwave. If you need help navigating or have a question, don't hesitate to ask a chef or manager.
Menu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.
Vegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
